Whole Wheat Lemon Poppy Seed Pancakes

These are So delicious! I actually made these for dinner tonight because they are so quick and easy and my kids loved them! What’s awesome about this recipe is that you can do so many things with it (minus the lemon and poppy seeds). I use this basic pancake recipe and then add anything I want to it. I’ve added puree’d banana and cinnamon, I’ve done pumpkin chocolate chip, as well as a beet/strawberry puree for a pretty pink pancake. There’s so much you can do with this recipe, I just love it!  In Hypnobabies we teach our students that staying healthy and low risk means enjoying a well balanced diet high in protein. These pancakes are a tasty way to help stay healthy and low risk during pregnancy.

 

Basic Pancake Recipe:

 

1 egg

1 C whole wheat flour

3/4 C whole milk (or 1/2 C plain Greek yogurt and 1/4 C. milk for some added protein)

2 TB butter or oil or applesauce

1 TB sweetener ( sucanat, agave, xylitol, etc.)

3 TSP  baking powder

1/2 tsp salt

 

For Lemon Poppy Seed Pancakes just add:
about 4 drops of lemon essential oil or zest of 2 lemons

1 TB of poppy seeds

I also used 2 TB of xylitol this time instead of just the 1TB.

Directions:

Beat the egg first, then add the rest of the ingredients and beat until smooth. Spoon onto a griddle and cook until the bottom becomes firm and sometimes it will bubble on top, then turn them over and continue to cook until cooked through the middle. They usually only need a couple of minutes on each side.

We topped it off with a little whipped cream and sliced strawberries, but my 4 year old liked it just plain with nothing on it, so whatever floats your boat I guess :) I think next time I’ll use coconut oil instead of olive oil/butter, mmmm…that sounds yummy. Enjoy!

Strawberry Banana Smoothie

I’m really starting to enjoy having a smoothie everyday. It’s such a quick, easy and delicious way to get in the nutrients that we all need on a daily basis.  This is one of the few ways I can get my husband to eat raw vegetables :) . The recipe I’m going to share today though, doesn’t have any veggies in it, but is packed with protein and is a great way to start your day or  have as a late night snack when you’re craving something sweet.

Ingredients:

1 Large Banana

10 oz. can of Coconut Water*

8 oz. Plain Greek Yogurt (I like Chobani)

1 scoop of Balance Complete (Protein Powder from Young Living)

1/2 tsp. Vanilla

8-10 Whole Frozen Strawberries

I usually put everything but the strawberries in the blender and blend it up until smooth, then I add the strawberries and blend again until smooth. Makes about 2- 12oz  portions.

*I buy the cans of coconut water because they are easier to find than actual young coconuts and easier to use. You should be able to find them at your local health food store. You can also just use milk instead, preferably raw.

There are so many things you can do with this recipe to make it more interesting by adding some coconut oil or an avocado, a little flax seed, pineapple, and the list goes on.

This recipe is so good and so easy to make. Between the yogurt and Balance Complete there is almost 30 grams of protein (total servings)! In Hypnobabies, we recommend getting about 75 grams of protein everyday, so this is an easy way of getting in a good chunk of it. Protein is so important in pregnancy as it can help avoid things like pre-eclampsia  and toxemia, which are so common among pregnant women these days. Everyone can benefit from more protein in their diet, why not get it from something as delicious as a strawberry banana smoothie!

Hypnobabies Class St. George, Ut.

 I just finished up my first Hypnobabies class in St. George! What a fun group of people! About six months had gone by before I was able to get a class started out here and I forgot how much I LOVE teaching this course. There is so much to learn about pregnancy and childbirth and I’m continually learning more as the years go by. Hypnobabies gives women the opportunity to actually be comfortable during birth so they can enjoy it and feel the empowerment that comes with making their own choices and being able to put complete trust into their own body and the birth process. It’s so fun to see the growth in my students as the weeks go by and as they learn to be more in tune with their body’s and baby’s. I love that Hypnobabies includes the birth partners in the birth preparation process and teaches them how to help the hypno-mom and also help them to become  more calm and confident during the birth. They get to practice with their hypno-mom every week and help her with the new cues and techniques that she’s learning. It really gives them the opportunity to learn and grow together and create or strengthen the bond between mom, dad and baby. It’s really a special time for the dad to be able to connect with his new baby in a way he wouldn’t have been able to do otherwise. The baby gets to hear dad’s calm, soothing voice as he reads mom her hypnosis script several times a week and is already starting a relationship with his baby even before he/she is born, creating an instant bond between the two of them at birth. How awesome is that! It can sometimes be hard for dad’s to bond with their newborn because they generally don’t have much communication during the pregnancy. So, this Hypnobabies course  provides plenty of opportunity for growing and developing relationships. I love the Hypnobabies program and am really excited to now be teaching classes in St. George!
